No Bake Brownie Bites
Thanks to Carolyn Strickland who made the no bake brownie bites for Seedy Saturday. Many of you asked for the recipe. Here it is! (While I love chocolate chips, you can make these without the chips if you need to leave out sugar.)
No-Bake Brownie Bites
Makes 23-24 servings
1 1⁄2 cups pitted dates
1⁄2 cup raisins
1 cup whole rolled oats
2 T pumpkin seeds or sunflower seeds
1⁄4 cup cocoa powder
2 T vegan protein powder (optional - like Orgain or Vega)
1⁄8 tsp iodized sea salt
1 tsp pure vanilla extract
3 T non-dairy chocolate chips (optional - like Enjoy Life brand)
Directions
In a food processor, combine the dates, raisins, oats, and seeds. Process until
the mixture is crumbly.
Add the cocoa powder, protein powder (if using), salt, and vanilla. Process again
and let the processor run until the mixture gets sticky and forms clumps.
Add the chocolate chips, if using, and pulse until a ball forms on the blade.
Remove mixture from the food processor and roll into small balls, slightly less
than 1 Tablespoon each, until all of the mixture is used.
Transfer to an air-tight container in the refrigerator, where they will keep for a
couple of weeks - or to the freezer where they will keep for a couple of months.
