No Bake Brownie Bites

Thanks to Carolyn Strickland who made the no bake brownie bites for Seedy Saturday. Many of you asked for the recipe. Here it is! (While I love chocolate chips, you can make these without the chips if you need to leave out sugar.)

No-Bake Brownie Bites

Makes 23-24 servings

  • 1 1⁄2 cups pitted dates

  • 1⁄2 cup raisins

  • 1 cup whole rolled oats

  • 2 T pumpkin seeds or sunflower seeds

  • 1⁄4 cup cocoa powder

  • 2 T vegan protein powder (optional - like Orgain or Vega)

  • 1⁄8 tsp iodized sea salt

  • 1 tsp pure vanilla extract

  • 3 T non-dairy chocolate chips (optional - like Enjoy Life brand)

Directions

  • In a food processor, combine the dates, raisins, oats, and seeds. Process until

  • the mixture is crumbly.

  • Add the cocoa powder, protein powder (if using), salt, and vanilla. Process again

  • and let the processor run until the mixture gets sticky and forms clumps.

  • Add the chocolate chips, if using, and pulse until a ball forms on the blade.

  • Remove mixture from the food processor and roll into small balls, slightly less

  • than 1 Tablespoon each, until all of the mixture is used.

  • Transfer to an air-tight container in the refrigerator, where they will keep for a

  • couple of weeks - or to the freezer where they will keep for a couple of months.
